7lbs lost as of today (2 months in!). Finally feel like I am making some progress!

I say this as I go to eat some German (my planned splurge of the week).

I’m so incredibly amped to hit the gym tonight…which is weird. Normally I have to draggggg myself there. Today, I’m already sitting at my desk mentally thinking about all the things I want to do.

Whats wrong with me? haha!

Apple Stuffed Chicken

Sharing this with my tumblr friends because its delicious, healthy, easy to make and doesn’t leave you feeling guilty. 

Apple Stuffed Chicken Breast

In a bowl mix a cubed apple, half cup low fat cheddar cheese (or Parmesan), 1/2 teaspoon cinnamin/ginger/nutmeg, and 1/4 bread crumbs. 

Slice chicken breasts lengthwise leaving a little pocket for the stuffing. Stuff the apple stuffing inside, lay chicken in a baking pan and dump the rest of the apple stuff on top. Drizzle a dash of pesto over the top (less than 1/4 cup) and bake in the oven at 350 for about 35-45 minutes. 

I served it with a side of broccoli/carrots, but Quinoa might be good too.

Ever think that the reason we have an obesity epidemic in this country is linked to the fact that we are terrified to experiencing pain? 

We medicate ourselves numb. You have to push yourself through pain/discomfort in order to lose weight.
